Today’s recipe is a tribute to my favorite masala maker; I baked a chocolate coffee cake to die for (gluten free especially for her), the recipe is posted below, but first lets talk about my eatingwithSOLE, first ever GIVE AWAY:

Quinoa Chocolate Coffee Masala Cake
In a large bowl combine:
1/2 cup almond milk
1/2 cup coffee (cooled)
4 farm fresh eggs
1 tsp of vanilla
3/4 cup melted coconut oil
add:
1.5 cups cooked and cooled quinoa
In a separate bowl combine together:
1 1/2 cups cane sugar
1 1/2 cup cocoa
1 tbsp baking powder
pinch of sea salt
1 heaping tbsp masala coffee
Bring wet and dry ingredients together and pour batter into a small prepared spring form pan. Bake at 350 for 50-60 minutes.
Allow to cool and before pouring a luscious layer of coffee gnache over the works.
Coffee Gnache
Melt 1 cup of good quality dark chocolate chips in a double burner, along with 1 tbsp of coconut oil.
remove from heat when melted and add 1/3 cup of cooled coffee, and 1/2 cup heavy cream
Stir until combined pour, spread per cooled cake and allow to set before serving, if you can handle being that patient.
