No bake – vegan- gluten free cookies AKA; monkey poo balls, haystacks, cocoa drops, etc…Whatever you call them, this is a redo of an old and easy classic. I made these with no dairy, and no wheat, they take about 10 minutes to make and about an hour to set up in the fridge, they are not to sweet at all, just perfectly balanced with coconut and chocolate.
In a large bowl mix together:
2.5 cups coconut (organic unsweetened)
2.5 cups oats (whole rolled, gluten free and organic)
1 cup hemp seeds
pinch sea salt
In a double boiler melt:
2 cups of dark chocolate chunks (the best quality chocolate you can afford)
2 tbsp grape-seed or coconut oil
1 tbsp vanilla
2 tbsp maple syrup
Once melted mix in 1 can full fat organic coconut milk, stir until well blended and silky looking.
Pour melted mixture over dry mix and stir until combined.
Portion with ice cream scoop into 1 0z. balls on to a lined baking sheet, and set in fridge to cool.
Serve and devour!
