Lushious Little Spelt Carrot Loafs

Mmm these little carrot loafs are my take on the Rebar Carrot Cake Recipe, and of course carrot cake wouldn’t be complete with out creamy cream-cheese frosting.

In a large bowl add all of these ingredients and mix together by hand:

3/4 c veggie oil

3/4 c brown or dark cane sugar

1/4 c light cane sugar

1/8 c candy ginger sliced razor thin

3 eggs

2 tsp vanilla

2 tsp cinnamon

1” knob fresh ginger finely grated

t sp fresh grated nutmeg

1 tsp sea salt

1.5 c spelt flour

1 tsp b.soda

1.5 c grated Carrots

3/4 c grated apple

3/4 c coconut

1/2 c hemp seeds

1/2 cup flax seeds

1/2 c diced dried dates

*This will make 1 cake or 9 little loafs or 12 muffins

Bake little loafs at 350º for about 15-17 minutes

I just eyeball creamcheese icing, in a mixer it’s about 1 part cream cheese 4 parts icing sugar, splash of flavour (lemon, lime, maple syrup, vanilla, almond… what ever you fancy, so long as it’s pure and not some cheap artificial flavour) slather the loafs in icing once cooled, and enjoy. Next time I make this I will try it with 1 cup spelt and 1/2 c buckwheat flour.
