chocolate hemp coconut oat balls


This is a super quick and easy one bowl recipe for little luscious macaroons packed full of oats, chocolate, hemp seeds and of course coconut! gluten free and lactose free, low-ish in sugar but high in deliciousness! They take all of 6 minutes to get in the oven and worth every second of effort!

In a stand mixer start by whipping 4 egg whites to soft peaks,

then add:

splash of vanilla (try my home-made recipe)
1/2 cup hemp seeds
1/2 cup of oats (organic gluten free quick oats)
2 cups of organic fancy shred coconut
1/2 cup of chopped chocolate (I used milk, but white chocolate would be dreamy)
1/2 cup of organic cane sugar

Gently combine, and portion into small balls on a parchment lined pan, bake at 350 for 15-18 minutes, or until nicely toasted.

  1. These look delicious, I’m definitely going to try them! Do you think they would work with quinoa flakes instead of oats?
