quintessential cucumber salad

No questions asked this the best cucumber salad ever!

It’s like mustard dill pickles only garden fresh and oh so crunchy! Perfect for hot summer days, and if you are drowning in cucumbers like we are.. then it’s a must.

Combine in a large bowl:

1-2 long english cucumbers, cubed into bite sized portions

1 small yellow onion, finely shaved into thin rings.

1 handful of fresh dill weed and or seed or both

Drench the lot in this simple dressing:

1 garlic clove minced

1 tbsp mustard

S+P

1 tbsp maple syrup

1/2 cup apple cider vinegar

1/3 cup olive oil

Allow the cucumber to soak up the dressing for at least 30 minutes before serving, then enjoy liberally! This is a whole lot like  a refrigerator pickle recipe, so you could easily do a larger batch and keep it at the ready in the fridge for at least a week or so.
