vegan chocolate mousse

And who doesn’t love a quickie on Valentines Day?

I whipped these uber-super food loaded chocolate coconut milk mousse’s off in about 5 minutes. Lickety-split. Your lover will swoon. Or maybe you cozy up by your self and feel ZERO guilt for eating the whole batch on this hallmark holiday.

Remarkably I was driven to make something nice for my family today even after doing a mega baking stint in the bake shake at the local cafe pimping out the bakery cooler with Valentines Sweets…Did I say pimping? I all out loaded the cooler with dozens of sinful sweets; I pulled out some of my old favorites, but everything got a valentines spin, adored with chocolate hearts, pinked-up with beet root powder galore (which made for a huge pink mess to address) and berry buttercream blissmass-ed.

I made my tried and true no flour chocolate tort, my hugely requested by the regular cafe staff espresso vanilla cookies, I also made these classic chocolate mousse’s, and some coconut macaroon (sans hemp but with plenty of beet root powder added to the egg whites to make for perfectly pink pillows of coconut goodness), a very berry version of this lovely brown betty,  oh and some chocolate beery buttercream cakes and  vanilla cheesecake cupcakes… all in a morning of baking madness. The point of all of this is that I came home with just enough energy to bust out these divine deep dark chocolate mousse kicked up with raw cacao, mesquite, lucuma, vanilla and maca, thickened  with creamy coconut milk.

OK you have 5 minutes to make some magic… and GO:

In a double boiler melt:

2 tbsp coconut oil

2 cups of the best best best quality dark chocolate you can afford

and a splash of vanilla ( the real deal)

once melted remove from heat and add:

1 can of full fat coconut milk

and 2 tbsp of Super Foods… I used Harmonic Arts Super Power Blend (our homesteads new love affair)

zip the lot up with what ever means you have.

Pour into some fancy cups, adorn with some chocolate hearts and allow to set in the fridge for at least 2 hours, before enjoying how ever you see fit!

  1. Wow! Your making valentines day goodies, I guess the trauma of cookie bouquet’s are starting to ebb! These little “quickies” look amazing!

    • Ahhh yes Cookie Bouquets! ARG. Nope no bouquets this year, *sigh of relief.

      Happy to be just the pinch hit festive baker, rather than pumping out 10 000 heart shaped cookie for the love hungry masses!
