Wheat free, flour free, gluten free, dairy free cake that is divine and deeply chocolatey, it must be too good to be true, right? WRONG, and the kicker is I finally cracked the perfect vegan frosting dilemma! So my intolerant friends, rejoice you can have your cake and eat it too!
I have been carrying this magazine page in my cookbook for about 3 years, and never had the time or energy to make this quinoa chocolate cake made with whole grain cooked quinoa not quinoa flour… well finally the day arrived and I just so happened to have need of 1 delicious chocolate birthday cake and as it happened I had on hand about 2 cups of left over un-seasoned cooked quinoa… PERFECT.
In a food processor blend:
1/3 cup almond milk
4 farm fresh eggs from the back yard
splash of vanilla
along with 2 cups of cooked cooled unseasoned quinoa
once well combined add to a large bowl along with:
1 cup of sifted raw cocoa powder
1 1/2 cup cane sugar
1/2 tsp bs
1 1/2 tsp bp
pinch of sea salt
Combine mixture and pour batter into a prepared cake pan either 2 x 8″ or a single 10″. When possible I always opt for push through or spring form pans, as I love the ease of neatly removing the cake from the pan to help cool it quickly without scraping and flipping.
bake at 350 for 40-45 minutes.
For the vegan amazing coconut frosting try this out:
place 1 can of coconut milk in the freezer for at least 5 hours
Then in a stand mixer with the whisk attachment whip the cream from the top of the coconut milk can, and the leave the water for another recipe or a smoothy.
Let the cream whip for a few minutes, meanwhile in a double boiler melt 1 tbsp coconut oil with 2 cups of dark chocolate chunks (as always, I recommend using the best quality chocolate you can afford… after over a decade in the bakery business I only use Callebaut chocolate… never chipits!)
Pour the melted chocolate into the stand mixer and combine frosting.
Slather this frosting on the cooled cake and you’ll be amazed at how thick this frosting is, it reminds me of a good buttercream, the presence it has on a cake is amazing!
