I promise these are way better for you than they look! These also happen to be extremely quick to make and are a pretty rewarding dessert to serve and enjoy. Inspired by that crazy vegan coconut mousse I made for valentines this year I decided to play off that formula to create these coconut milk and peanut butter chocolate truffle balls.

And who doesn’t love a quickie on Valentines Day?

I whipped these uber-super food loaded chocolate coconut milk mousse’s off in about 5 minutes. Lickety-split. Your lover will swoon. Or maybe you cozy up by your self and feel ZERO guilt for eating the whole batch on this hallmark holiday.

Remarkably I was driven to make something nice for my family today even after doing a mega baking stint in the bake shake at the local cafe pimping out the bakery cooler with Valentines Sweets…Did I say pimping? I all out loaded the cooler with dozens of sinful sweets; I pulled out some of my old favorites, but everything got a valentines spin, adored with chocolate hearts, pinked-up with beet root powder galore (which made for a huge pink mess to address) and berry buttercream blissmass-ed.

chai chocolate pansy cake

Remember a couple weeks back when I posted this delicious spelt espresso vegan cake recipe, well when I was enjoying a bite of this dense and moist cake I though about how great it would be with chai spice rather than espresso, and so I busted one out to take to a lovely dinner party, and I was right… it was FABULOUS with a spicy chai kick. My daughter picked little purple pop up pansies from all over the garden and they were the perfect finish for this divine vegan dessert.

I didn’t tweak too much from my original post but I did double the batch to yield a whopping 12” spring form pan that made for 12 hearty portions (easily could have served 24)

I used in this recipe both a chai concentrate liquid as well as a chai spice blend. If you don’t have both I am sure just the concentrate (or a stiff brewed chia tea) would do, but you may want to add a pinch of a few chai essential spices from your pantry; especially cardamom and cinnamon and clove.

dreamy coconut pecan date bliss balls

These bliss balls are way too easy and way too healthy and tasty not to make and eat all the time!

In a food processor in the following order bring all ingredients together and blend until you have a sticky thick paste and the nut pieces are very tiny:

1 cup organic dates (or date paste)

1 Tbsp coconut oil

1 Tbsp maple syrup

1.5 cups of pecans

1/2 cups coconut

a pinch of salt

a pinch of cinnamon

 

Once combined portion with a small mechanical ice cream scoop (or spoons)  and coat with more shredded coconut, top with a pecan and serve with a smile.

Simple and sweet.
