This is so simple, fast and bursting with flavor you can’t help but love this soup! This is more Vegan and Gluten free goodness that sticks to your ribs! Perfect for drizzling cool spring days…

Start by cooking 4 cups of green french lentils using your preferred method.

Using a heavy bottomed soup pot and a good splash of oil start browning:

1 large yellow onion diced fine

2 cloves of garlic minced

2 medium carrots diced

2 tbsp garam masala

2 tsp tumeric

2 tsp curry powder

1 tsp cayanne

Once the onions are cooked through add:

1 L spicy tomato sauce

1 L hot water

and the cooked lentils.

Allow to boil away for about 20, add S+P to taste.

Then add a handful of finely chopped ribbons of kale, and a fresh grate of ginger. Garnish with cilantro and serve!
